Tacos with a touch of the Caribbean - summer in one bite!

Description

What can you bake with plantain flour? Why not make homemade tacos for Friday fun – with gluten-free tortillas and a little extra goodness.

Ingredients

12 SMALL TORTILLAS
4 dl plantain flour
3-4 dl oat milk
3 tbsp coconut oil
1 teaspoon salt
1 teaspoon baking powder

HOT TOFU TRAVEL
1 pkg firm tofu
2 dl coconut milk
1 tbsp tomato paste

SPICE MIXTURE
1 pinch black pepper

1 tsp onion powder
2 tsp paprika powder
2 tsp cayenne pepper
2 teaspoons cinnamon
1 teaspoon salt
1 tbsp coconut sugar

GARLIC SAUCE
2 tbsp mayonnaise
1 clove of garlic
1 dl crème fraîche

ACCESSORIES
1 piece of red cabbage

1 green onion
1 bunch fresh coriander
1 mango

Do this:

1. Mix all the spices in a small bowl.
2. Crumble the tofu in a large pan and fry in oil over medium heat until the tofu is browned.
3. Pour in the spice mixture and tomato paste and fry for another 2-3 minutes until fragrant.
4. Pour in coconut milk and mirin, reduce heat and simmer.
5. Season with salt.

6. Set the oven to 190 degrees hot air.
7. Whisk together all the ingredients for the bread in a bowl, until you have a thick batter.
8. Take a piece of parchment paper and cut out 5 circles, 2-3 tablespoons per circle and spread out into 15 cm diamonds with the back of a spoon.
9. Place in oven and bake for 10 minutes. Turn them over and bake for another 5 minutes. Let cool slightly.

10. Mix all the ingredients for the garlic sauce.
11. Cut the mango, red cabbage, green onion and coriander into smaller pieces.

12. Place 3-4 breads per plate, red onion, minced tofu, mango, green onions, topped with green onions and garlic sauce.
