1. Mix all the spices in a small bowl. 2. Crumble the tofu in a large pan and fry in oil over medium heat until the tofu is browned. 3. Pour in the spice mixture and tomato paste and fry for another 2-3 minutes until fragrant. 4. Pour in coconut milk and mirin, reduce heat and simmer. 5. Season with salt. 6. Set the oven to 190 degrees hot air. 7. Whisk together all the ingredients for the bread in a bowl, until you have a thick batter. 8. Take a piece of parchment paper and cut out 5 circles, 2-3 tablespoons per circle and spread out into 15 cm diamonds with the back of a spoon. 9. Place in oven and bake for 10 minutes. Turn them over and bake for another 5 minutes. Let cool slightly. 10. Mix all the ingredients for the garlic sauce. 11. Cut the mango, red cabbage, green onion and coriander into smaller pieces. 12. Place 3-4 breads per plate, red onion, minced tofu, mango, green onions, topped with green onions and garlic sauce.
